Guest Chef Kaelin spent his youth at his mother’s cooking school, Seasons of My Heart. In 2010 he started as a line cook and later he staged at renowned establishments like Blue Hill at Stone Barns, Eleven Madison Park, and Noma’s pop-up restaurant in Tulum, MX in 2017. In 2018 Kaelin served as a Chef Consultant at the Michelin-starred Oxomoco. After that he opened La Calenda for renowned Chef Thomas Keller. August 1, 2024 | Masa Series Volume 7 featuring Chef Wilson Alonzo

A native of Yucatán, Wilson Alonzo is the driving force behind the Yucatecan regional cooking workshop at the Technological University of the West in Maxcanú. Currently, he is developing the Ya’axche Ethnogastronomic Complex in the municipality of Halachó. Chef Wilson Alonzo undertakes academic journeys across the country to promote Yucatán cuisine through workshops and conferences in cities like Paris, London, Madrid, and Barcelona. – Cocktail specials and wine pairing available.
